Who here likes to cook say “I”! Who here likes to see smiles on faces when a bite of your cooking is tasted say “I”! Who here is busy say “I”! ME: I, I, I.

I love cooking! Food, shoes, jewelry, and purses are my best friends in life. (Notice food tops the list.) Sometimes though, my life starts to take over (unfortunately it is never the shoes, jewelry, and purses part) and making dinner can be pushed down the list of “things to do.”

I’m not even a mom! I am just a working wife. At this point, I don’t understand how moms do what they do. Wake up early, pack lunches, get kids to school, clean house, do laundry, go grocery shopping, pick kids up from school, play taxi, play doctor, get themselves ready for the day, exercise, make dinner, help kids with homework, etc. I didn’t even add go shopping for shoes, clothes, or jewelry, get nails done, get hair done, or get a massage to the list! Whether you are a mom or not, being a woman can get hectic!

Sadly, when life gets crazy, nutrition is the first thing to go. We begin to eat while driving, while grocery shopping, or just miss it all together. Well thanks to Jane Doiron all of that can come to an end! Jane has written a cookbook to help busy women provide delicious homemade meals despite a busy schedule!

This week I had one free night. The rest of the week I would not be home at dinner time but I wanted my husband to still eat well. I gave him the cookbook and let him pick out what he will eat. Teriyaki Chicken

It is in the bag! I stuck it in the fridge and will cook it after it marinates. I also had the option of freezing it for up to 3 months! I think what I will end up doing it is cooking it and sticking it in the fridge. Then my husband can warm it up when he is ready.

Beef Stew

YUM! This is going to be good! The first thing my husband said when he walked in was “OOO! Something smells GOOD!”

This stew can be frozen in containers for up to 3 months!

Chicken Parmesan

Here is a look at the chicken parmesan before it went into the oven. Normally for this recipe you would prepare the bread mixture before hand and then cook right before eating. I don’t think my husband would take the time to cook it so he will get to warm it up and throw it over precooked noodles for dinner!

Baked Chicken Chimichangas

These were quick and easy! The guts of these can be prepped ahead of time and frozen for up to 3 months. I baked mine and then my hubby can just warm them up.

Shh! Don’t say anything about the tortilla I tore.

Honestly this will feed my husband for way more than a week but that is why this cookbook is so great! I can make it and FREEZE it.
